This easy and delicious side dish really has the flavor and texture of the luscious mashed potatoes. Roasting the cauliflower is key, steaming or boiling adds too much moisture and results is a soupier mash.

Ingredients

1 Head Cauliflower

1-2 Tablespoons Olive Oil

1 Tablespoons Cream Cheese

1 Tablespoons Sour Cream

1 Tablespoon Heavy Cream

1 Tablespoons Salted Butter

1 Tablespoons Parmesan Cheese

Salt and Pepper to taste

Directions

Preheat oven to 400º. Break cauliflower into florets. Toss the florets in the olive oil, sprinkle with salt and pepper and roast until tender and browning, about 20 minutes. Transfer the hot cauliflower to a blender or food processor and blend with the butter, cream cheese, sour cream and heavy cream. Blend until smooth. Salt and pepper to taste. Add crumbled bacon, chives and shredded cheddar for a loaded potato twist.
