Ingredients:

1 1/2 Cups Brown Sugar

2 Eggs

1 Cup Oil or Applesauce for a healthier version

1 Tablespoon Vanilla

2 Cups Flour

1 Cup Oatmeal

1 Pinch of Salt

1 Teaspoon Baking Soda

1 1/2 Teaspoons Cinnamon

3 Cups Peeled, Cored, and Diced or Shredded Apples (Around 3-4 deepening on size)

A Handful of extra Brown sugar for Topping

Instructions:

Step 1: Preheat your oven to 350 degrees, spray, and line your muffin pan.

Step 2: Using a hand mixer cream the sugar, eggs, oil or applesauce, and vanilla together. Set aside and in a separate bowl sift together the flour, oatmeal, baking soda, salt, and cinnamon. Slowly stir in the dry ingredients to the wet mixture, only stirring until combined. Now stir in your diced or shredded apples. I prefer to shred mine with a cheese grader. If you do try shredding your apples there is no need to peel first but make sure you squeeze most of the juice out from the shredded apples to eliminate excess juice as these muffins are moist enough on their own.

Step 3: Fill your pre-lined muffin cups 3/4 of the way full and sprinkle the tops with brown sugar.

Step 4: Bake at 350 degrees for about 20-22 minutes or until a fork inserted into the middles comes out clean.

Step 5: Remember to cool before removing from the pan and diving into your new favorite apple muffin recipe. Share, bake more, and repeat.
