Ingredients

Cake

2 Sticks unsalted butter, softened

1 1/2 cups white sugar

1 tablespoon baking powder

1/2 teaspoon salt

4 eggs

1 cup milk

2 1/4 teaspoons vanilla extract

2 2/3 cups flour

Frosting

2 – 7oz jars marshmallow cream

1 8-oz. block cream cheese warmed to room temperature

1/2 teaspoon vanilla extract

Decorations

1 1/2 cups shredded coconut

Pixie Stix. thin rope licorice and any other candies you like

Bunny Cake

Directions

Preheat oven to 350º. Coat 2 round eight inch cake pans with cooking spray, line with waxed paper and spray the paper too. Beat butter, sugar baking powder and salt on high until fluffy and well blended. Add eggs one at time and beat until fluffy. On low speed, add milk and vanilla; batter may look lumpy and curdled at this stage. Beat in flour just until well blended. Divide batter evenly between the two pans. Spread evenly with a spatula. Bake 30 to 35 minutes or until toothpick inserted in the center comes out clean. Cool on a wire rack ten minutes. Run small knife or spatula around edges and invert onto the rack. Remove wax paper and cool completely.

Cut away 1/3 from each side of one of the cakes in a curved fashion to create two rounded ears and leaving the center in a bow-tie shape. Place the whole round cake in the center of  the platter, cutting board or cake board on which you intend to present your cake. Place your “ears” on the top and your bow-tie at the bottom so that each touch the round cake where appropriate. Dye 1/2 cup of the shredded coconut with the powder of 2 cherry pixie stix . In a small mixing bowl fold the frosting ingredients together until well blended. Frost the entire bunny and the tie generously with all of the frosting. Top the center of the ears with the pink coconut. Sprinkle the remaining white coconut over the rest of the cake and around the base for fun. Build your bunny face out of your favorite candies. Sprinkle leftover colored candies around the base with the coconut for a pretty pop of color. There are no rules in the kitchen; substitute fruits, nuts and any edibles your family enjoys to decorate your bunny cake face and bow-tie. Green pixie stix make for a fun grass colored lime flavored coconut as well. Pixie stix can also be added to the frosting for color and flavor. Use your imagination and have a Happy Easter.
