The baked banana in this recipe adds a depth of flavor your guests will love without ever realizing there is a banana in it at all. This has been a family favorite for generations. Adjust the sugar and spices to your family preferences. There are no rules in cooking!

Ingredients 

3 Pounds Sweet Potato Cooked and Mashed

1 Small Banana

1/4 Cup Butter Melted

1/2 Teaspoon Salt

1/2 Cup Packed Brown Sugar

2 Eggs Slightly Beaten

1/8 Teaspoon Nutmeg

1/8 Teaspoon Cinnamon

1/8 Teaspoon Ginger

Topping

1/3 Cup Butter Melted

1 Cup Packed Brown Sugar

1/3 Cup Flour

1Teaspoon Cinnamon

1/2 Teaspoon Nutmeg

1 Cup Pecans Chopped

Instructions

Preheat oven to 350. Throw the banana in the oven and bake until the skin turns black. Peel and mix the warm banana with the mashed sweet potatoes until well incorporated then add butter, salt, brown sugar, cinnamon, nutmeg and ginger. Spread the mixture evenly in a shallow 2-quart baking dish and set aside. Mix first five topping ingredients until well combined. It will look a bit lumpy but that is ok. Add the pecans and mix well. Spread the topping evenly over the sweet potato mixture. Bake at 350 for 30 to 40 minutes or until topping is a tasty golden brown.
