Few dishes speak to us of the holiday season like stuffing. Whether you have turkey, goose, duck or ham, stuffing is sure to be involved with your holiday feast. This simple and timeless recipe has been pleasing families for generations.Ingredients:

12 ounces dry bread cubes
2 cups chopped celery
2 cups chopped onions
2 tablespoons chopped Italian parsley
2 tablespoon chopped fresh sage
1/2 tablespoon chopped fresh rosemary
1/2 tablespoon chopped fresh thyme
1 teaspoon salt
1/2 teaspoon black pepper
8 tablespoons butter
2 1/2 cups turkey broth or 2 1/2 cups chicken broth
Directions:

Saute the onions, celery. herbs, salt and pepper in butter over medium heat until soft and onions turn clear.
Toss sautéed mix with the bread cubes in a large mixing bowl, adding enough broth to make it wet but not too soggy,  and place in an oblong baking pan.
Cover with foil and bake at 325F. for 45 minutes.
Uncover and bake 15 minutes more.
If you are stuffing a bird, pack it lightly into the cavity as it expands as it cooks. Leave some room for it to grow. If you have more than will fit in the bird, place it in a baking pan and follow the baking directions above.
If your stuffing is not 165-170F when you remove it from the bird, place it in a covered baking dish and put it back in the oven until it is piping hot.
There are many variations to this recipe and it is easily dressed up with your favorite additions. Here are a few of ours;

• Chopped Granny Smith Apples

•  Cooked Sausage

• Pine Nuts, Walnuts or Almonds

• Dried Apricots

• Cooked Bacon or Panchetta
