This is a simple recipe with an excellent combination of flavorful ingredients. It also looks and tastes like a lot more work than it really is. Bon Appetite’
4 small tenderized pork cutlets
12 spears fresh asparagus
1 cup shredded pepper jack cheese
8 strips bacon
salt & pepper
Mrs. Dash Seasoning
Salt and pepper one side of each pork cutlet. Cut the asparagus just taller than the pork cutlet. Place 3 asparagus spears 1 inch from the cutlet edge. Season with Mrs. Dash then top with 1/4 of the cheese. Roll tightly around the asparagus and cheese beginning at the 1 inch edge, leaving the tip and end of the asparagus peeking out. They will crisp up and maybe even blacken while picking up the flavor the bacon. Wrap 2 strips of bacon tightly around the stuffed cutlet roll and secure them in place with toothpicks. Fry on medium heat in a not stick skillet turning frequently until the bacon is nicely browned on all sides of the roll. Sprinkle with shredded pepper jack cheese and serve immediately. Remove toothpicks before serving.
