BC House Omlette, 1982 – Spring Breakfast Buffet

There once was a day when Buffalo Chip’s Pizza in Westwood did serve breakfast. While breakfasts at Buffalo Chips were soon no more, this recipe has lingered in this small town. It was Buffalo Chips’ House Omlette. Per person, prepared separately:

3 eggs

1 teaspoon water

1 piece of cooked link sausage

1 – 2 pieces

2 tbsp. bacon grease or cooking oil.

6 – 8 medium red potatoes, cut in quarters, then sliced to approx. 1/8″ thick
