Pumpkin MuffinsBy Mara Dobyns

The weather is turning, the leaves have fallen, if the snow hasn’t hopefully it will soon. That’s right, it’s cuddle season. If you’re looking for that perfect homemade snack to pair with your hot chocolate as you watch the snow fall from the window by your fireplace, this is it. It doesn’t get any better than a recipe from mom. Which happens to be who I stole this recipe from. Thanks, mom, haha. As a childhood favorite I am happy to share this recipe with my own family and now with you. I hope you enjoy it as much as we do.

Ingredients

2 cups flour

2 tsp baking powder

1 tsp baking soda

1 1/2 tsp cinnamon

1/2 tsp cloves

1/4 tsp all spice

2 cups sugar

4 eggs

2 cups pumpkin

1 cup oil

2 cups all bran cereal

1 1/2 packages of chocolate chips

1 cup nuts (optional)

Directions

Preheat oven to 350

Stir the flour, baking powder, baking soda, cinnamon, cloves, all spice, and sugar all together and set aside.

Beat the four eggs until foamy, add in the pumpkin, oil, and all bran cereal until well mixed. Mix in the dry ingredients and fold in the chocolate chips and nuts. Bake for 12-15 minutes, let cool, and devour.
