Holiday Topped Ham & Cheese Quiche


• 3 eggs, well beaten

• 1 Tbsp. flour

•1 teaspoon. butter

• 3/4 cup milk

• salt

• pepper

• 1 cup of cooked ham, chopped

• 1/2 each red and green bell peppers

• 1/2 cup cheddar

• 1/2 cup jack cheese

Heat the butter over medium heat in shallow, non-stick skillet. Add ham. If desired, add one tablespoon each of finely chopped bell peppers, red and green. When lightly browned, add remaining ingredients. Pur into pre-cooked pie shell (see recipe, right). Bake at 350º for 45 minutes or until inserted knife comes out clean. Top with 3 each red and green pepper rings (cut rings by cutting one end off the pepper and cleaning out seeded area, Then slice circles and arrange on top alternating colors.
