Ingredients:

 

• 2 cups whole, roasted almonds – If you buy them raw, spread them out on a cookie sheet to roast. Place in oven for about 10 minutes on 350º, stirring once after 5 minutes.

• 1 cup sugar

• 1/3 cup brown sugar

• 3/4 teaspoon cinnamon

• 1/8 tsp. cream of tartar

• 1/3 cup hot water

• 1/2 tsp. vanilla extract

 

Line cookie sheet with foil to protect. Grease the foil with butter or cooking spray. In a small saucepan, combine water cinnamon, sugar and cream of tartar. cook on medium, stirring until sugar dissolves. Continue to cook, stirring regularly for about 5 minutes. Remove from heat. Stir in vanilla. Add nuts; stir. Turn the mixture out onto the prepared baking sheet, separating the nuts with a spoon. Place in hot oven (375º), stirring every few minutes…. carefully, with oven mitt and spatula, so you don’t get burned. When it is too stiff to stir, it is done. Remove immediately. Let cool; break up and serve or package for gift giving.
