2 tbsp. bacon grease or cooking oil.

6 – 8 medium red potatoes, cut in quarters, then sliced to approx. 1/8″ thick

1/2 medium onion cut into thin sliced onion rings, cut in quarters

1/2 teaspoon garlic powder

1/2 tsp fresh or dried parsley

Salt & Pepper to Taste

Heat cooking oil to medium high heat in large skillet. Add potatoes and let brown a few minutes before turning. Sprinkle onions over top and cook a minute or two on that side. Lowe to medium heat. Then turn periodically, cooking over medium heat until potatoes are tender. Sprinkle with parsley and brown, stirring 2 minutes more. These can be kept warm by placing in foil on a pan in the oven on warm. Leave foil open some, so they don’t get soggy.
