Chicken Angelo
Marinade Overnight for best flavor
4 Chicken Breasts (or 1 cut up fryer)1 Clove Garlic, Diced
2 jars (12 oz.) Marinated Artichoke HeartsJuice of 1 Lemon
2 cup sliced Mushrooms Salt to Taste
Place Chicken in a baking dish. Drain liquid from artichokes, and pour over chicken. Cover tightly and marinade in refrigerator over night (or minimum 4 hours). Refrigerate artichokes in jar while chicken marinades. To prepare: Place chicken and all marinade into a large frying pan. Cover and simmer on Medium-Low heat until chicken is fully cooked. Uncover and turn up heat and Fry chicken until browned. Lower heat and add artichokes, mushrooms, garlic, lemon juice and salt. Simmer until mushrooms are tender. Serve over rice. DELICIOUS!
